Mustard

Mustard is a plant that grows spontaneously in the sunny zones of Central and Southern Italy. Mustard flowers produce small seeds from which, after slow processing, we obtain the spicy preparation used in the mustard fruits of Antiche Mostarderie.

The Romans used mustard in the kitchen and by combining its ground seeds with boiled must they obtained the first known mustard fruit.
Hence the name of Mustum Ardens, or Hot Must.

The spicy taste of mustard regularly and constantly decreases over the first 3 months following production; after this period the taste stabilizes remaining unchanged and harmonious until Antiche Mostarderie.
